In 1989, Jean-Marie Amat, driven by a consuming passion for gastronomy and the art of entertaining, decided to reinvent the place. Working alongside renowned architect Jean Nouvel, he created the Saint-James, the first contemporary hotel restaurant. In 2024, after its renovation, Le Saint-James will become a unique jewel, blending the rich history of the past with the bold vision of the present.
